Bendakaya Pulusu (Okra in tamarind gravy)

 It is a very popular dish in Andhra made with lightly fried Okra cooked in spicy tangy tamarind sauce. It is simple and easy to prepare. We can easily prepare with minimal ingredients.


This goes very well with papad, vada, any fry...

Ingredients

Okra/Lady’s Finger/Vendaikkai – 2 cups

Sliced Onions – 1 (big)

Peeled Garlic – 1 (big)

Salt to taste

Chilli Powder – 1 ½ tsp

Coriander Powder – 2 tsp

Tamarind Water – 1 cup

Cumin Powder – ½ tsp

Jaggery – a pinch

(To Temper)

Mustard Seeds – 1 tsp

Fenugreek Seeds – ¼ tsp

Dry Red Chilli – 3

Sesame Oil – 2 tsp

Curry Leaves – few

Method

In a vessel add 1 cup of hot water and soak lemon sized tamarind balls into that. Once it done, extract the tamarind water.

In a kadai, heat oil. Add mustard seeds, fenugreek seeds, curry leaf and dry red chilli then let it be for few seconds.

Then add sliced onions, garlic and saute it for few seconds. Then add okra pieces with salt and saute it well.

Now add chilli powder, cumin powder and coriander powder and mix well. Then add tamarind water and required water then close the lid and keep cook on 10 min.

Add a pinch of jaggery and let it be for 2 to 3 min. Now add chopped coriander leaves.

Then serve hot with steamed rice with papad.

Shrimp Bottle Gourd Curry



This is another tastiest shrimp recipe. This is mouthwatering dish, I hope you'll definitely love this dish. We liked so much. This is one of my nativity recipe.
 This goes very well with steamed white rice, idli, dosa, chapatti, roti...

Ingredients
Shrimp/Prawn – ½ kg
Chopped Onions – 2
Chopped Tomatoes – 2
Sliced Green Chilli - 3
Cubed Bottle Gourd – 1 (medium)
Cubed Potato – 1
Cubed Eggplant (brinjal) – 2
Fennel (Sombu) Powder – 1 tsp
Chilli Coriander Powder – 3 tsp
Salt to taste
Tamarind – a small lemon sized balls
To Temper
Venkaya Vadagam – 1 tsp
Curry Leaves – few
Oil – 2 tsp
For Paste
Grated Coconut – ½ cup
Water as required
Method
Soak tamarind in hot water and extract the juice.
Wash and clean the prawn pieces and keep it aside.
In a kadai, heat oil. Add the tempering items which are under “to temper” and saute it for few min.
Add the chopped onions and fry till it turns slight in color. Then add chopped tomatoes and fry till it becomes mushy.
Now add shrimp/prawn with salt and fry for another 10 minute on a medium flame.
Add fennel powder and mix it well. Then add green chilli, remaining veggies and sauté it for few minutes. Check the salt level.
Now add chilli powder, coriander powder, with tamarind water and close the lid and keep cook for another 10 to 15 minutes.
In a blender add grated coconut with required water and make it as a fine paste.
Then add this into shrimp curry and let it cook for another 2 min.
Switch off the flame and serve with hot steamed rice!!!

Egg Drop Noodle Soup

This is simple and easy recipe. It looks yummy and tastes good. we love to have... especially my son loves very much. If we don't have any other big plan to prepare anything seriously my choice always would b e like this. Adding vegetables and egg will make this dish healthier.
Ingredients
Instant noodles - 200 grams
Egg - 2
Tomatoes - 2 medium
Onion - 1 medium
Oil - 1 tablespoon
Ginger - 1/2 inch
Garlic cloves - 2-3
Vegetable stock - 2 cups
Fresh coriander leaves - 7-8
Tomato ketchup – 1 tsp
Salt - to taste
Crushed black peppercorns to taste
Cornstarch 2-3 teaspoons
Vinegar 1 tsp
Method

In a pan, heat 2-3 cups water. Add noodles and mix well. Cover and cook till the noodles are fully done. Drain out.

In another pan, heat oil. Add onion and saute till it turns translucent. Finely add the chopped ginger to the onion and saute further for min. Add tomatoes and mix well.

Finely chop garlic and add to the tomatoes and mix well. Add vegetable stock and cook for 10-15 minutes. Break egg in a bowl and whisk well. Finely chop coriander leaves.

Add tomato ketchup to the tomatoes and mix well. Add salt and crushed peppercorns and mix well. Add cornstarch slurry and mix well. Add whisked egg in a thin steady stream and mix well.


Add vinegar, coriander leaves and cook till the soup thickens. Transfer the cooked noodles into a serving bowl and serve hot.

Bachelor Quick Egg Fry


It is a very simple and easy to cook. This mainly would be liked by those who love eating non-vegetarian. It’s fast to prepare and taste delicious.
I hope this recipe definitely helpful to bachelors and working women. This take minimal ingredients and less time to prepare this dish. 

Ingredients

Boiled Eggs – 4 (Halved)

Chopped Onions – 1 (big)

Chopped Tomatoes – 1 (big)

Ginger Garlic Paste – ½ tsp

Meat Masala – 1 tsp

Curry Leaves - few

Salt to taste

Mustard Seeds – ½ tsp

Method

Heat oil in a pan and when it gets hot add little mustard seeds.
 
When they crackle adds finely chopped onions and stir fry for a minute.
Then add ginger garlic paste.

Fry onion, ginger garlic paste for another few minutes till the raw flavors are gone.

Now add some fresh curry leaves and meat masala and mix well.

Stir fry this for another 3 to 4 minutes till the oil separates.

Once the masala is fried, add a cup of boiling water and mix well.

Take care not to burn the masala mixture.

Add required amount of salt to taste and mix well.

Cook for a minute and add the boiled eggs carefully into the boiling curry.

Let it be for another 2 to 3 min.

The quick egg curry is ready to be served.

Soya Chunks Tomato Rice


Soya Chunk Tomato Rice is a tastiest rice recipe. It has high protein. It helps to prevent heart diseases. This is a perfect lunch box recipe. Kids love and enjoy to have this.


This goes very well with egg fry and onion raita.

Ingredients
Basmati Rice – 2 cups
Soaked Soya Chunks/ Meal maker – 2 cup
Sliced Onions – 3 (big)
Chopped Tomatoes – 5 (big)
Sliced Green Chilli –
Salt to taste
Chilli Powder – 1 ½ tsp
Turmeric Powder – ½ tsp
Ghee – 3 tsp
Finely Chopped Mint Leaves - few
Oil – 2 tsp
Water – 3 cups (1 : 1 ½)
(To Saute)
Bay Leaf – 1
Cinnamon Sticks – 2
Clove – 2
Cardamom – 3
Finely Chopped coriander Leaves – few
Method
In a pressure cooker, heat ghee. Add the ingredients one by one which are under to sauté and fry this for few seconds.
In that, heat oil. Then add green chilli, onion slices and sauté it well. Add soaked meal maker into it with little salt and fry this for few min.
Add chopped tomatoes and cook it well. Add chilli powder, turmeric powder with required salt and mix well.
In a kadai, heat remaining ghee with cardamom, mint leaves and takes the rice and sauté it for few min. This help to avoid without breaking the rice.
Then add the sautéed rice with required water. Then close the lid and keep cook till 3 whistles comes out.
Once it done, serve it with egg fry and onion raita.
