Healthy Black Beans Salad

 Black Bean Salad is an easy, cold lunch or side dish for your next picnic or weight loss meal. In this dish cooked black beans (soaked + cooked with little salt) mixed with some healthy veggies and fruits and then tossed with homemade dressing. If you're planning for a party, it can be helpful to make your side dishes ahead of time. This salad can be made several hours ahead and stored in the refrigerator until ready to serve.


Ingredients 

For Salad Bowl 

Cooked Black Beans - 2 Cups 

Chopped Avocado - 1/2 Cup 

Finely Chopped Carrot - 1/4 Cup

Finely Chopped Onion - 1/4 Cup

Finely Chopped Cilantro - 1/4 Cup 

Finely Chopped Tomato - 1/4 Cup 

Chopped Lettuce - 1/4 Cup 

Pomegranate Seeds - 1/2 Cup

For Dressing 

Olive Oil - 1/2 tbsp 

Finely Chopped Garlic - 1 tbsp 

Orange Juice - 1/4 Cup 

Salt to taste 

Ground Pepper to taste 

Method 

In a mixing bowl, add cooked black beans along with other veggies and keep it aside.

In a bowl , add olive oil, orange juice, chopped garlic, salt and ground  pepper and mix well.

Finally add these dressing into salad bowl. Then toss well and serve fresh.
