Mushroom Fried Rice



Mushroom fried rice is very easy to prepare and also very popular among kids and adults. You do not have to go to the restaurants. 
 You can easily prepare mushroom fried rice at home to suit your taste. It is also great way to use up leftover rice.

It’s a very popular indo chineese recipe makes a quick one pot meal. I have made this fried rice along with veggies, you can make it with just mushroom
too.
  This goes well with any fry items and Manchurian too.
Ingredients
  Basmati rice - 1 cup
  Chopped Mushrooms - 200 grams
  Cubed Capsicum – ½ cups
  Chopped Carrots – ½ cups
  Cooked Peas - 1/2 cup
  Oil - 1 tbsp
  Finely Chopped Onion – 1 cup
  Minced Garlic - 2 1/2 tbsp
  Finely Chopped Green chilli – 1
  Ginger - 1 inch piece
  Finely Chopped Spring Onion - 2 tbsp
  Soya Sauce - 1 tbsp
  Chilli Sauce -2-3 tsp
  Salt and Pepper powder to taste
  Chopped Coriander Leaves - few

Method
Soak basmati rice for 20 minutes, drain the water completely and cook with 1 3/4 cup of water and a little salt.
Cook it in such a way that each grain is separate. Once cooked, fluff it with a fork and spread it on a plate to cool.
Clean mushrooms, pat it dry and cut it into big pieces.
Heat a tbsp of oil in a pan, add onions, garlic and saute until onions turn transparent.
Add finely chopped ginger, green chillies, spring onion greens and capsicums saute for a few more seconds.
Add mushrooms and carrots, and then cook until the veggies becomes soft. Add cooked peas and saute well.
Then add cooked rice, soya sauce, chilli sauce, salt, pepper powder and saute on high flame for 2 minutes.
Switch off the flame and garnish with spring onion greens. Serve hot with gobi manchurian.
